Martin never tried to be unpredictable for the sake of it imo, it was always about breaking genre cliches that he thought were silly. We were shocked because we were taking those cliches for granted. As we reach the end of a huge story it's unavoidable that the surprises are going to be fewer. But this isn't a "surprise the audience" competition. I disagree that those would have been shitty endings, the deahts dont have to be epic, thast the point, it should be real, Ned Stark death was so unceremonious yet great.

A mediocre ending is how littlefinger died, the writters attempt to make him go in a failed ruse was simply silly, it would have been much better if Arya simply killed him because Brann tells her the truth about him.

it's not about the deaths being epic or not. If the story has no point then there's no reason for the author to tell it. John dying there at the stabbing while Martin had wasted so much time building him up would be like watching breaking bad ending with Walter White getting arrested after selling the first batch of drugs. There's just no reason to tell a story like that despite the realism. Jaimie's story ending by Cersei killing him off at that moment wouldn't be on that level of awful I agree, but the whole build up of change and growth for Jaimie would suffer if we saw him die as soon as he decides to leave. There's so many stuff left unexplored that way, tensions, newfound feelings of regret or hatred. It would also be pretty stupid to imagine Cersei just killing him without at least being genuinely angry or mad.
Littlefinger's death was stupid because of the execution. He was never a PoV character and his death could add meaning for the ones who are, but the show runners felt like he had to die in a plot twist, because they thought plot twist deaths are what's working for the show up to now. Instead of breaking genre cliches they created a sloppy predictable one. Obv all the ppl involved had to become morons/out of character for the twist to work.
I don't necessarily think that him dying to his own thing (scheming/betrayal) was a bad choice, they just did it terribly and it probably never works in such a small time frame
