I'm not 3betting flop vs unknown if I the money goes in I figure I'm flipping at best
but I thought vs draws I'm ahead and protect
I lose to 6x which I can't find many combos that raise flop and maybe he folds something better than one pair (or better pair) vs my line, this is the part I'm not sure I should expect

i dont think people bet fold sets on this turn

I'm not sure how often I should count sets betting this turn though
I'm playing now so I can't count combos and stuff but I guess here the consensus is that this is spew?

I like the idea. If you're gonna continue with the hand you may as well shove. He may still call you with worse, like pair with T or diamonds with a pair. It's only 1 buy in and he's playing real goofy with his min raising and half pot bet. This won't be my standard but it's a good way of dealing with unknowns playing unorthodox.

Between your fold equity, 12 outs vs 2 pair, and the times you're ahead should even out the EV for when he ha a set / straight.

can you show us how you estimate his weighted calling range?
One of them spots where it's about equity and hard to say if bluff or value

I think calling is guaranteed -ev
fold is 0ev
so only need to determine if shove can be >0ev or not too lazy to construct his range for you tho too much guessing
