I think Mark Sisson explains cholesterol pretty well. He's a paleo, low carb type of guy, in a nutshell.
Some people don't like the idea of paleo and/or low carb high fat diets, but Mark has pretty solid reasoning and citations for any claim he makes(and BTW I don't agree with everything Mark says/believes).
I think diet makes a lot of sense from an evolutionary standpoint. For 2 millions years we survived off eating only animals and plants. Yes, we had a high mortality rate at that time, but that's due to illness and not having medicine/vaccine, wars/battles, high infant mortality, nutritional deficiencies, lack of water, etc.. Only recently has our diet radically changed to include mass amounts of simple sugars and highly processed foods.
