Nice chart, although it's a bit large to consult...maybe just listing the items would do fine too.
hoss: what I usually do when trying something I haven't done before is look up a number of recipes from various (trusted) sources and just go from there. Keep ingredients that you like or which you think will fit into the dish, decide on ratios by comparing. I'm into cooking a bit, I usually cook more elaborate twice a week, but I'd like to know if any of you guys have done courses or the like. I could do with some advice/tips/practice/ideas on special dishes but I'm not going to do a full-time degree or go to a course that has only houseviwes in it. What are your experiences?
