MP is a regualr playing 21/17 over 869 hands. Villain is playing 76/51, with a 3Bet and squeeze of 14 over 87 hands. His aggression frequency is 68 and I also perceive him to be maniacal, potting when he senses weakness.
At this point in the session I felt as though he might have shifted gears after losing a couple of big pots in succession. He seemed to have calmed down a little and wasn't getting involved in every pot (for example he limp folded from early position to a single raise when earlier he would have probably opened pot and potted the flop).
Most of villains aggression that I whitnessed was straight out pot betting as aggressor. His CBet in single raised pots is 94% (16/17) and 75% in 3Bet pots (3/4).
What are your thoughts on the flop?

Something like, we bet because we probably have the best hand and it's awesome in general and when someone c/shoves on us he'll have AhAXhX a bit and QQ a bit but most of the time he has some random weird ass crap like some pair + fd worse then us or whatever so while we're getting it in bad a bunch we'll get it in really good sometimes and we're probably flipping for the most part.

Checking sucks because a lot of turncards sucks huuuuuge dicks.

3bet pot - overpair + 2nd nut flush draw - 250bb is really just standard in plo - 400+ i'd imagine its played dif mostly

Bet/call seems standard to me as well, particularly against this opponent. The assumptions I made at the time, when I was reviewing this hand, were likely too tight, which made it look like a fold. However looking back I don't think he has as many strong made hands in his range when he takes this line, unless he has some sort of redraw to go along with it. So as Dusty pointed out when he's ahead we'll likely have very little equity, but we could also be flipping or ahead ourselves enough to get it in.
At the end of the day, I'm not looking to fold a spot like this against a maniacal opponent. His line just felt so trappy at the time and given the way he was playing, that I had doubts how standard this call/shove is.

Thanks for all your input.
